Getting It Taken Care of ASAP: As soon as you have shot and gutted your kill, wash off any blood on the fur, and get to a locker or dress it yourself as soon as possible if you plan to mount it. Make sure to get it to a taxidermist as soon as you can. As soon as you shot your trophy, bacteria has began the deterioration process and hair will start to fall out. Only small amounts at of hair will fall out at first. 

Salting Your Hide: Please do not attempt to salt the hide yourself while the head is still on the pelt. You will only make the cure that much harder, you will have a half cured hide the other half will be starting to rot. It all has to be done at same time so the fluids can drain off equal and stop the bacteria growth. Please be sure to remove all parts in stomach and chest cavity. this is were all the bacteria gets its start.

Fish:  I like to put fish on ice till I can get them home. Once home, take a towel soaked in clean water, lay it out flat and fold the wet towel around the fish carefully so you don't damage the fins. Then place in heavy duty garbage bag and push the air out of bag and roll up nice and freeze .. you'll end up with a giant ice cube and the fish will keep for a very long time. Fish fins tend to freezer burn, and lose the fine skin in between the small bones of the fin. It also causes the scales to fall out.. this is the best way to preserve your fish until you can get it to a taxidermist..
